The cheese has been made in Italy since the thirteenth century and the same techniques used then are still used today. Mozzarella can be also smoked, which gives it a golden-brown colour and an interesting flavour.It is the best melting cheese, suitable for topping of pizzas, timbales of pastas or filling for sandwiches, but also delicious uncooked and sliced with red tomatoes and fresh green basil dressed with oil, salt and pepper.
