TASTING NOTES: Elegant aromas of sugary citric, honey, pear and apricot. On the palate, it opens up and lingers sweet, ample and oily elegant. A full-bodied white with finesse on the long finish. TECHNICAL NOTES: The three varieties are vinified separately in exactly the same way. The grapes are hand-picked in boxes from 18 to 20 kilograms, clusters are selected, then they are destemmed and after that the best grains are chosen. The grapes are softly pressed in a pneumatic press and undergo an enzymatic stripping in cold for 36 hours. Then, the must is racked and fermented with selected yeasts in stainless steel tanks at a temperature of 14°C. Once fermentation is finished, only the Chardonnay is aged in oak barrels where their malolactic fermentation occurs and it is matured for six months. Once the ageing is finished, the final blend is done, after that they are stabilized, filtered and bottled. It is stored in the winery for at least a year before putting it in the market.
