TASTING NOTES: On the palate, I found that it had a wonderful structure, balancing blackberry and plum, chalk, with a slightly spicy finish. TECHNICAL NOTES: Partially destemmed grapes. Traditional winemaking from 2 to 3 weeks with indigenous yeasts.Winegrowing: 12 months, 20% in concrete vats and 80% in large barrel and French oak casks. Tangential filtration before bottling.
