Reputed as Europe’s finest mortadella.Type of meat: EU and Italian pigs from controlled breeding circuits.Production process: a blend of selected lean meats (back leg & shoulder) is minced smoothly and mixed with small cubes of pig throat fat, spices and aromas. Cooked slowly in decade-old dry brick ovens.
